Summer Spreads

What’s better than summer cooking? Everything is simple, really fresh and super-healthy. Take a look at some my favorite meals, courtesy of my husband Steven and oldest son Dylan.



Steven's Steamed Clams

Steven’s Steamed Clams

3 cloves fresh garlic, minced

1/2 cup dry white wine or dry Vermouth

2 pounds of clams (Littlenecks or Manilla), rinsed and cleaned

3 tablespoons fresh parsley, chopped

1 tomato, diced

Add garlic and wine to a medium pot over medium heat and bring to a simmering boil. Add clams and tomato and cook covered for 5-7 minutes, stirring occasionally, until clams have opened. Discard any clams that are still closed. Add parsley and give the pot a quick stir.

Dylan's Shrimp Cobb

Dylan’s Shrimp Cobb

I love Cobb salad because it’s so easy to customize. I skip the bacon and blue cheese and throw in fresh tomato, avocado, hard-boiled eggs, sprouts and any other fresh produce that I have on hand. In this variation, Dylan added grilled shrimp—a quick, healthy protein that’s a great substitute for chicken.

  1. Hey Bobbi, try some Texas Caviar! It is a fantastic summer bean salad.

    16oz black-eyed peas, cooked and cooled
    1 bunch of cilantro, chopped
    1 ear of corn, kernels trimmed off
    1 small red onion, chopped
    4-6 limes, juiced
    3 jalapenos, chopped (seeds optional)
    2 tbsp olive oil
    2 tbsp apple cider vinegar
    1/4 tsp salt (or to taste)
    1/4 tsp black pepper (or to taste)

    Toss to combine. Serve chilled with tortilla chips.
