While walking in Manhattan this summer, I stumbled across Chloe’s Soft Serve Fruit. I’d never heard of it, but I liked how simple the ingredients were: just fruit, water, and cane sugar. Once I tried their soft serve, I was hooked—it’s light, fresh and better than any fro-yo out there. Last month, the team from Chloe’s stopped by BB headquarters for a tasting and I had the chance to talk to Chloe Epstein (the company’s namesake and co-founder) about how she got her start, the flavors you need to try now, and how to make a Chloe’s “mimosa.”
Bobbi: Tell me how you got started and where the idea for Chloe’s came from.
Chloe: The creation of Chloe’s Soft Serve Fruit was fueled by my intense sweet tooth and commitment to a healthy lifestyle. Who can’t relate to that? I was forever searching for something that could satiate that frozen treat craving without all the artificial stuff. When I became pregnant, I started to think more profoundly about the quality of the foods I was feeding myself and my future offspring… I longed for something delicious, and healthy but most importantly, clean. I wanted to create the truly “good for you” fro yo.
Bobbi: How did you come up with the recipe?
Chloe: With my partner, Michael Sloan, an avid triathlete—using a freezer full of over-ripened bananas, water and a touch of organic cane sugar. That’s it. The idea was to use as few ingredients as possible, let the pure intensity of the fruit dominate, all the while still achieving the creamy consistency of soft serve ice cream or fro-yo. We diluted the fruit with water to get it through the soft serve machine and we quickly learned we needed to add a small amount of sugar back in so that the mix would not freeze up in the machine. Banana was the easy, obvious fruit to start with but once we were able to perfect the process with strawberry, mango and apple we were off!
Bobbi: What’s your favorite flavor? What’s the most-requested flavor in your stores?
Chloe: My personal fave changes depending on my mood, the weather, and a host of other things, but I’d say right now my favorite Soft Serve Fruit flavor is Pineapple followed by Apple (coming soon). My favorite Chloe’s Pop is Dark Chocolate followed by Tangerine (coming back soon as well). In-store, our most popular Soft Serve Fruit flavors are Banana and Mango and the Pops to beat right now are Mango and Dark Chocolate. People are passionate about what they like. There is no more heated debate than that of the Mango vs Strawberry slushy discussion.
Bobbi: Before Chloe’s, what was your go-to treat?
Chloe: Without a doubt fro-yo was my pre-Chloe’s treat and the inspiration behind all of this. Although, I always have and will love me some Swedish Fish candy.
Bobbi: Any recipes or favorite toppings that you love to use?
Chloe: Try dipping a Chloe’s Pop in champagne (it’s so good) or blending it in with your favorite smoothie recipe; swap out the juice and use a pop instead. My kids love half a Chloe’s strawberry pop, frozen berries and banana with a little almond milk.
